How We Work

Farm-Direct Sourcing

We buy whole animals from eleven family farms within a hundred miles — raised slow, on pasture, without growth promotants. Fewer miles, fuller flavour.

Broken Down In-House

Nothing arrives pre-portioned in plastic. Our butchers break, trim, and tie every cut on-site each morning, so we know exactly what's in the case.

Cut to Order, Packed Cold

Online or at the counter, your order is cut when you ask for it, vacuum-sealed, and kept under 4°C until it reaches your hands.
